Eggplant – cut into sticks
1 tsp olive oil
1/2 tsp salt and pepper
1/2 cup Italian seasoned breadcrumbs
2 tbsps Parmesan cheese
1 egg white
1 cup marinara sauce for dipping (optional)
Preheat oven to 450.
Line 2 baking sheets with parchment paper or foil and lightly spray with cooking spray.
Combine breadcrumbs and parmesan cheese in a bowl. Put beaten egg white in a separate bowl.
Dip a few strips of eggplant at a time into the egg white, then into the breadcrumbs, then place on the baking sheet.
Spray with more cooking spray.
Bake for 10 minute on the middle rack, turn and bake an additional 5 minutes or until golden brown.
