Ingredients for casserole:
1 head cabbage, coarsely chopped
1 medium onion, chopped
8 Tbsps butter
salt and pepper to taste
1 can cream of chicken soup or cream of mushroom soup
1/3 cup mayonaise
Ingredients for topping:
3 Tbsps melted butter
1 cup shredded sharp cheddar cheese
1 sleeve Ritz crackers, coarsely crushed
Preheat oven to 350. Lightly grease 2 quart casserole dish
Melt butter in a large nonstick pan. Add cabbage and onion, cook 8-10 minutes, stirring frequently – until partially cooked down.
Season to taste with salt and pepper
Put cabbage mixture in prepared baking dish
In small bowl stir together soup and mayo, spread mixture over cabbage.
In a small bowl stir together topping ingredients, sprinkle over casserole.
Bake for 30 minutes or until topping is browned
