You can mix zucchini and yellow squash if you would like. These are great served with marina or sour cream.
2 cups grated squash or zucchini (or a mixture)
2 eggs, beaten
1/4 cup chopped onion
1/2 cup all-purpose flour
1/2 cup Parmesan cheese
1/2 cup shredded mozzarella cheese
salt to taste
2 Tbsps vegetable oil
In a medium bowl, combine everything but the oil.
Stir well to combine ingredients
Heat the oil in a skillet over medium-high heat.
Drop mixture by heaping tablespoonfuls and cook for a few minutes on each side until golden brown.
Serve warm with marina or sour cream
